One of my favorite things to grow in the garden is butternut squash. It’s very versatile to cook with but best of all it’s pretty bug resistant compared to other squash we’ve tried to grow .
Our vine isn’t huge but it’s a loaded with squash so I’ve been looking at different recipes. Tonight I’m making a spinach butternut squash lasagna and I added asparagus from the garden for extra measure. It has a cream sauce with it as opposed to a tomato sauce, crossing my fingers it comes out good .
Today was a lazy day on the farm. David went fishing and crabbing I know he caught a nice sized ono but I’m waiting to see what else he is going to come home with. I on the other hand caught up on some reading and some sun it was really beautiful today. After three weeks of rain it was nice to have a warm sunny day.
It’s the third weekend of rain. Too wet to mow and not fun for me to work in the garden. In all honesty it’s my hubby who does most of the work but I had plans to help with a greenhouse. So instead we picked some berries (mulberries and black raspberries) and made scones. We roasted a batch of our coffee and sat on the porch enjoying the start of another wet day. I can’t really complain because it’s actually pretty wonderful. I’m feel blessed.
